Pesto
I’ve talked a lot about having sauces on hand to spice up meals. Everyone in our house loves pesto and it is very easy to make. I usually use my small Vitamix but use whichever brand you have.
Directions
Add enough olive oil to cover the blades of the Vitamix.
Add two BIG handfuls of picked basil leaves (extra basil never hurts here so be generous).
Add 2 garlic cloves…simply omit the garlic to make this SIBO compliant.
Add 1/2 cup or 64 g of pine nuts.
With the blender on low to start, remove the container cap and drizzle more olive oil through the opening in the lid. Using the tamper, scrape the sides and corners of the blender container to get the ingredients moving while the liquid is absorbed.
Salt and pepper to taste. You can add a littleness more salt than usual since the pesto will also salt your plain pasta, vegetables, etc.
If it’s thicker than you like, add more olive oil through through the lid hole at this point.
Tips
** Pine nuts can be replaced with other nuts (and even sunflower seeds) to change the flavor. My favorite alternative is walnuts.
